Sloppy Louie's

Sloppy Louie's Catfish Saute

6 Tablespoons Butter melted (1/2 stick)
1 Egg beaten (optional)
1 Tablespoon Parsley chopped
1/2 Lemon juice of
3 Tablespoons White Wine sherry
1 Pound Catfish fillets

1. Heat 1/8 inch oil in skillet until very hot.

2. Lightly dust catfish fillets with flour, then dip in egg.

3. Fry fish about 1 minute on each side, just until pale gold.

4. Pour off oil. Add butter and remaining ingredients except garnish.

5. Saute fish three more minutes per side, basting with pan juices.

6. Transfer fish to heated platter and garnish. Suggestions: Sloppy Louie's puts parsley on 1/2 lemon slice, paprika alt.
